Recipe: Sand-Tone Baked Apple with Sea-Buckthorn Honey & Almond Crumble

Color & flavor cue: The baker’s warm sand hue meets golden honey, buttery crumbs, and bright orange sea-buckthorn—visually harmonious, fresh, and balanced in taste.

Ingredients (for 1 baker)

1 tart apple (e.g., Boskoop), cored
2 tbsp sea-buckthorn berries (or 1 tbsp sea-buckthorn purée)
1 tbsp runny honey
1 tsp vanilla cream cheese or mascarpone
Pinch of cinnamon
Small knob of butter

Almond crumble

1 tbsp ground almonds
1 tbsp flour
1 tsp sugar
1 tsp cold butter, in small pieces

Method

Preheat the oven to 190 °C (top/bottom heat). Set the baker ready.
Hollow the apple from the top (keep the base intact) and place it in the baker. Mix sea-buckthorn with honey, vanilla cream cheese, and cinnamon; fill the apple and top with the butter.
For the crumble, combine almonds, flour, and sugar; rub in the cold butter until small crumbs form. Scatter loosely over the opening.
Cover with the lid and bake 18–20 minutes. Remove lid and bake 3–5 minutes more, until the crumbs are pale-gold and the apple releases juices.
Rest 2 minutes, then serve warm—plain, with vanilla sauce, or a spoon of crème fraîche.

Tip

No sea-buckthorn? Use 1 tbsp apricot jam or a few orange segments for a similarly warm, sand-hued note.
